까마동이과에 속하는 가지들은 감자들과 토마토들과 동료이다. 가지들은 짙은 보라색부터 하얀색까지 색이 다양하게 있으며 다양한 크기로 존재한다. 그것들은 일년 내내 수확이 가능하며 늦여름 동안 성수기이다. 그것들은 자랄수록 쓴맛이 더해지며 쉽게 상한다. 그러므로 그것들을 따자마자 바로 조리를 하면 더 맛있는 요리가 만들어진다.

As a member of the nightshade family, eggplants are related to potatoes and tomatoes. Eggplants range in color from rich purple to white and come in various sizes. They are available year-round with the peak season during late summer. They become bitterer with age and are easily perishable. Thus, cooking them soon after they are picked makes a tastier dish.
